Modern development of commercial sturgeon farming in Russian Federation is based on reproduction of sturgeon hybrids, characterized by high survival, rapid growth and marketable mass rates. The mass-size, chemical composition and histological characteristics of the muscle tissue of marketable bester hybrids, cultivated in recirculating aquaculture systems were studied. The obtained data helped to determine the prospects for the use of hybrids in the production of a wide range of products, including delicacy.Одним из путей развития товарного осетроводства в Российской Федерации является выведение продуктивных гибридов осетровых рыб, отличающихся высокой выживаемостью, быстрыми темпами роста и набором товарной массы. В работе исследованы размерно-массовый и химический состав, дана гистологическая характеристика мышечной ткани товарных гибридов бестера, выращенных в установке с замкнутым циклом водоснабжения. На основании полученных данных определена перспективность использования гибридов при производстве широкого спектра продукции, в т. ч. деликатесной.
