Composition and quality of lipid fraction of waste tilapia silageAbstract
El objetivo del presente trabajo fue determinar la composición y los índices de identificación y calidad de la fracción lipídica de los ensilajes (químico y biológico) de residuos del fileteado de tilapias. El ensilaje químico se preparó con 2 % de ácido sulfúrico 98 % y 1 % de ácido fórmico (p/v) y el biológico con 15 % de miel de caña y 3 % de yogurt (Lactobacillus acidophillus) (p/p) y se almacenaron por 30 días. Los resultados mostraron que ambos ensilajes poseen todos los ácidos grasos presentes en la materia prima y el 60 % fueron insaturados. El oleico (18:1ω9) fue el de mayor concentración (30,2 %) seguido del palmitico (18:0) (27,4 %) y linoleico (18:2ω6) (16,8 %). Los índices de iodo (878 mg/g), saponificación (194,5 mg KOH/g) y ácidos grasos libres (3,4 %) fueron compatibles con los datos de la literatura. Los valores de peróxidos resultaron bajos en los ensilajes e indicaron una menor tendencia a la oxidación en los residuos fermentados.To determine the composition and indexes of identification and quality the lipid fraction of the silage (chemical and biological) from tilapia filleting waste was the aim of the present work. The chemical silage was prepared with 2 % of sulfuric acid 98 % and 1 % formic acid (w/v) and the biologycal silage with 15 % of sugar cane molasses and 3 % of yogurt (Lactobacillus acidophilus) (w/w) and stored for 30 days. The results showed that both silages have oll fatty acids from raw material, with 60 % value of unsaturated acids. The oleic acid (18:1ω9) was higher concentration (30,2 %) followed by the palmitic acid (18:0) (27,4 %) and linoleic acid (18:2ω6) (16,8 %). The indexs of iodo (878 mg/g), saponification (194,5 mg KOH/g) and free fatty acids (3,4 %) were compatibles with the data in the literature. The value of peroxid resulted low and indicated fermented waste presented fewer tendencies to oxidize.
